Healthier Cinnamon Muffins

These Healthier Cinnamon Muffins are one of the simplest and fastest muffins to bake. With an optional sweet caramelized topping these ones are my favorite for the kids. With this recipe you’ll only need one bowl making even clean up a breeze.

INGREDIENTS

2 Cups All Purpose Flour

1 Cup Brown (slightly more minerals) or Cane Sugar( contains Fiber and is more environmentally friendly)

2 Tsp Baking Powder

3 Tsp Cinnamon

1/2 Tsp Pink Himilayan or Sea Salt (Less Refining is a healthier option)

1 Cup Milk

1/2 Cup Extra Virgin Olive Oil (Significantly less saturated fat than butter or other oils)

2 Eggs

Cinnamon Muffin Topping

1 Tsp Cinnamon

2 Tbsp Brown or Cane Sugar

TIME AND TEMPERATURE

In an oven preheated to 375 degrees, this recipe will get you about 16 muffins in 13 to 15 minutes of baking time.

*You can make smaller muffins for your littler ones just by decreasing your batter per muffin and your time baking.

STEPS

Preheat your oven to 375 degrees and line or grease your muffin tins.

In a large bowl add all your dry ingredients : Flour, Sugar, Baking Powder, Salt and Cinnamon. Mix and create a hole in the middle of the flour mixture.

Add your wet ingredients into the hole created in the flour mixture.

Fold your dry ingredients into the center , rotating around the bowl until the mixture is combined.

Add any additives such as nuts, chocolate chips, or raisins by folding them into the blended mixture.

Distribute your batter between the desired count of muffins.

Generously sprinkle the cinnamon topping mixture on top of your muffin batter

Bake until a inserted toothpick comes out clean 13-15 minutes. For smaller muffins decrease your time and keep an eye on them while testing with a toothpick.

Remove from oven and allow to cool for 10 minutes, then place on wire rack.
