Homemade Hamburger Soup

Homemade Hamburger Soup is one of those simple staples from my childhood that just warms the soul. These super low cost meals provide healthy options for your meals even on a budget.

Homemade Hamburger Soup Ingredients:

  1. 1 1/2 lb hamburger
  2. 2 large Diced Onions
  3. 4 Large carrots
  4. 5 Celery Stalks
  5. 3 cans worth of beef broth(homemade or store bought)
  6. 2 cans worth of tomato soup (homemade or store bought)
  7. 1 Bay Leaf
  8. 8 Tbsp Barley
  9. 1 Tbsp Thyme
  10. 3-4 Cups of Chopped Cabbage

Instructions

Over Medium High heat, start by frying your onions in a little bit of Olive Oil in a saucepan. Once your onion starts to soften a little bit, you can add the hamburger. Depending on the hamburger used remove any fat once done. If using lean ground beef you can probably skip this step.

Once the meat is almost finished cooking add your tomato soup and beef broth. For those who dislike tomato soup you can simply supplement more beef broth, or change the ratio 4:1 etc.

With the Add the chopped carrots, cabbage and celery to the saucepan with the bay leaf and thyme. Cook for 20-30 minutes covered on a low heat until the vegetables are tender. Adding the barley about half way through, this will allow the barley and vegetables to soften at the right times and speeds up the cooking process.

Add Salt and Pepper to taste. Adding more water if a thinner soup is preferred.
