Healthier Banana Bread
This Healthier Banana Bread is soon to be one of your most often made at home snacks. It is definitely one of my kids favorites to eat and mine to make. Fast and easy to make, it is always a crowd pleaser. with the ability to be changed up with simple additions. But the biggest benefit is you can also make it more health conscious with these simple changes:
Timing
With the quick PREP TIME of 15 minutes, and approximate BAKE TIME of 60 minutes at 375 degrees ,this recipe will get you one 9×5″ loaf. Or 12 muffins with a BAKE TIME of about 25 minutes
Ingredients
2 Cups Flour (whole wheat ,all purpose) (quantity may need adjustment if using specialty flours)
1 Teaspoon Baking Soda
1/4 Tsp Salt (Pink Himilayan or Sea salt) Less refining produces a healthier option.
1/2 Cup Extra Virgin Olive Oil (Significantly less saturated fat than butter or other oils)
3/4 Cup Brown Sugar(slightly more minerals) or Cane Sugar( contains Fiber and is more environmentally safe)
2 Eggs
3 Over ripe Bananas
1 Tsp Vanilla (optional)
Step One
Preheat your oven to 375 and lightly grease a 9×5″ bread pan.
In a large bowl mash your bananas, adding the eggs, oil, vanilla and sugar.
Stir in the dry ingredients (Flour, salt and baking soda) Stop when no dryness is visible.
Add any optional nuts or chocolate chips
Step Two
Pour your batter into your greased bread pan or lined muffin tins and bake for 60 minutes for the bread and 25 minutes for the muffins or until a toothpick comes out clean after being inserted.
Let cool for 10-15 minutes. Take a small spatula or butter knife and ensure the sides of the loaf are free from the pan before transferring it to a wire rack.
