Easy Zucchini Loaf

This easy zucchini loaf is unexpectedly soft and moist, giving you the perfect solution to all those zucchini you’ve grown. With the ability to be blended with bananas or pumpkins, it adds different options to this spectacular bread. It can even help when kids don’t like to try new things, if they like banana bread, simply split the zucchini with bananas. Easy to make and easy to adjust the flavor on the fly.
This easy zucchini loaf takes about 20 minutes of prep time. This recipe will provide your with 2 loaves in about 50-60 minutes. If you choose to make 24 muffins instead, the baking time is reduced to about 25 minutes. As baking times and temperatures may vary slightly, start checking your baking 5 to 10 minutes prior to the timer, and always use a toothpick through the centre to ensure they are fully baked. If it comes out wet it needs more time.
Prepping
After peeling the zucchini and removing the seeds, use a cheese grater to shred up the zucchini. The more zucchini used in your loaf or muffins the more moist and dense it will be.
Ingredients
- 3-4 cups of zucchini
- 3/4 Cup butter or olive oil
- 3 Cups Flour
- 1 Tsp baking powder
- 1 Tsp baking soda
- 1/2 Tsp ginger
- 1/4 Tsp nutmeg
- 2 1/2 Tsp cinnamon
- 1 1/3 Cup brown sugar
- 2 Tsp vanilla
- 2 Eggs
- 1/4 Tsp salt
- Chocolate chips, Cocoa or Nuts *optional*
Easy Zucchini Loaf Instructions
Preheat your oven to 375 degrees.
Simply add the dry ingredients, flour, baking powder, baking soda, ginger, nutmeg, cinnamon, sugar and salt into a large bowl and mix.
Creating a hole in the centre of the dry ingredients, add your wet ingredients. The zucchini, oil, vanilla and egg is then folded into the dry ingredients and mixed until you have created a consistent batter. Once consistency is reached, any nuts or chocolate chips can be added and folded into the batter.
Ensure you grease your loaf or muffin tins. add your batter and bake at 375 for about 60 minutes for your loaf and 25 minutes for your muffins. Always set the timer on your baking ten minutes prior to the finished time, just in case. Enjoy the easiest zucchini loaf ever!
